Sausage and Rice

 Everyone LOVES this dish & it's a bit addictive!


STEP 1

Saute the following Ingredients in this order in a big frying pan with a lid.



* 1TB Avocado or olive oil to sautee the following

* 1 big onion chopped up

* 1 tsp coriander seeds crushed

* 1 tsp cumin seeds crushed

* 1 tsp Fennel seed crushed (optional)

* 2 tsp Cumin powder

* 2 rsp Coriander Seed



When onions are translucent sautee for 3mn

* 1.5 cups basmati rice

Add

* 2 Tbs tomato paste diluted in 

* 3 cups of water

* 3 chicken bouillon cubes 

Or 

* 1.5 cups of water 

* 1.5 cups of chicken broth


Put on the lid and cook 12 to 15mn



While the rice cooks

STEP 2 

* 5 Mild Italian Sausages

In a frying pan saute cut up italian sausage or decasse them and cook nice and crispy

Remove Meet and set it aside. 

In same pan saute

* 1 Red Bell Pepper chopped

* 1 zucchini or yellow squash Chopped

Or any other veggies you fancy and have on hand like Asparagus

Add meat back in the pan with veggies with.

* 1 can of Corn rinsed and drained.

In this photo I had asparagus

STEP 3

Mix rice with Meat and veggies. 

Top with

* Fresh Coriander Chopped.
